I grabbed this organic lentil deal!

Until recently, I never cooked with lentils. I went to a friend’s house and she had lentil soup simmering for us for lunch. I saw how easy it was to make (and healthy), so now I make it in batches every week for my husband to take to lunch. My kids also love this recipe and sometimes devour it before I have a chance to put it in mason jars and freeze for lunches! Before this, neither my kids nor my husband were soup fans, but they love this soup as it’s packed with flavor. This soup is super easy to make in my Instant Pot. It’s cooked in just 10 minutes, without having to precook the lentils.

 

Lentil Soup in the pressure cooker (I use the Instant Pot):

1 TB ghee, vegan butter or butter
1/2 zucchini grated 
3 carrots grated
1/4 onion chopped
1 TB minced garlic
32 oz. organic broth (vegetable or chicken)
1 TB organic Better than Bouillon (I use beef, but they also offer vegetable or chicken)
1 C water
1 C Arrowhead Mills organic lentils
1/8 C dry quinoa 
2 TB pasta sauce
1/2 tsp Tabasco original sauce
3 TB onion powder
2 TB dry basil 
1 tsp. dry sage
1/2 tsp. salt
1/4 tsp. pepper

Press Saute Button on Instant Pot and add butter
Add garlic and onion and cook until soft
Add zucchini and carrot and cook for 1 minute, then turn off Instant Pot
Add remaining ingredients
Press Soup button on Instant Pot, change time to 10 minutes and seal

You can then do a quick release or let it sit, I’ve done it both ways and it comes out great.
