The last time this deal was available, I bought it as this is such a hot price for organic lentils! I created a lentil soup recipe in my Instant Pot to use up the lentils. My husband is not a big soup fan, but he loves this soup (so do my kids and I)Â as it has a ton of flavor, so I make a batch each week and pack the soup in mason jars for him to take to work. It’s a great recipe for kids to help with, too!
Lentil Soup in the pressure cooker (I use the Instant Pot):
1 TB ghee, vegan butter or butter
1/2 zucchini grated (I hit up the Farmer’s Market before making the soup, so veggies can vary)
3 carrots grated
1/4 onion chopped
1 TB minced garlic
32 oz. organic broth (vegetable or chicken)
1 TB organic Better than Bouillon (I use beef, but they also offer vegetable or chicken)
1 C water
1 C Arrowhead Mills organic lentils
1/8 C dry quinoaÂ
1 TB pasta sauce
1 tsp onion powder
1 tsp. dry basil (I mix up the herbs depending on what I have in my garden or on hand)
1 tsp. dry sage
1/2 tsp. salt
1/4 tsp. pepper
Press Saute Button on Instant Pot and add butter
Add garlic and onion and cook until soft
Add zucchini and carrot and cook for 1 minute, then turn off Instant Pot
Add remaining ingredients
Press Soup button on Instant Pot, change time to 10 minutes and seal
You can then do a quick release or let it sit, I’ve done it both ways and it comes out great.
