Corned Beef Brisket, Potatoes, Carrots, Cabbage Goodness
with Kerry Gold Butter from Ireland
A layer of little yellow potatoes in the skin,
1/2 head of fresh cabbage cut in 1 inch pieces,
those tiny carrots, already peeled,
some chopped shallots,
1/2 stick of Kerry Gold Butter, melted (a pinch of salt and pepper in it) and tossed with the veggies in a 9×13 pan,
4 cups chicken broth then over the veggies,
1 fresh Corned Beef Brisket (leave any fat ON it) drained from the package ,
the spice pkt mixed with the other melted 1/2 stick of butter and poured over the brisket (yes, I did that) on both sides.
Lay the brisket over the veggies,
cover with aluminum foil or another pan
and cook 350 for THREE hours,
turn the meat once half way thru cooking time.
Oh, my.
Slice the brisket thin with an electric knife and eat it all together. Oh, boy!
It’s currently $2.99 for 8 ounces at Trader Joe’s and is $7.69 for 24 ounces at my local Costco. These are more options in case people don’t have an Aldi’s near them.
