Simple Swaps: Cooking Oil

cooking oil

There’s a lot of confusing information out there about cooking oil. Understanding the process in which these oils are made can help clear up the confusion.

Why?  While the source of the oil is important, what’s most important is how the oil is made.  Oils like extra virgin olive oil and coconut oil are produced through a pressing method.  This helps to retain the natural antioxidants.  It also allows the oil to be in its natural state, unlike vegetable oils.  Vegetable oils, such as canola, peanut and soybean, are created through a chemical process, altering the state of the oil.  The natural antioxidants are destroyed, so chemical preservatives such as BHT are added.   Petroleum solvents and chemicals to improve color are often added to vegetable oils.  The high heat process these oils go through, changing the state of the oil, have been known to cause heart disease.
