One of my favorite (and easiest) things to make is non-dairy whipped cream using canned organic coconut milk. I just refrigerate the can for a day, scoop out the hardened milk into my mixer and whip on high with a little bit of vanilla and stevia. It’s so good as a fruit dip. So, I’m always keeping an eye out for good deals on coconut milk. Amazon has a nice price cut on larger size cans of Thai Kitchen’s organic unsweetened coconut milk, plus a coupon!
